- 1 yellow onion diced
- 1 lb chicken breasts cubed into smaller pieces
- 1 cup uncooked brown rice
- 1 tsp dried thyme
- 1 tsp salt
- 1/4 tsp pepper
- 4 cloves garlic minced
- 2 cups chicken broth
- 3 cups frozen mixed vegetables THAWED (make sure the veggies have thawed either in the fridge or microwave)
- 1/2 cup cheddar cheese shredded
Spray slow cooker with non stick spray, add all ingredients except for frozen veggies, and cheese.
Stir well, cook on high for 3 hours or on low for 6 hours.
For the last 10 minutes of cooking, stir in veggies and cheese cover and let cook for 10 more minutes.
