- 1/2 cup cooked crumbled bacon
- 1 yellow onion diced
- 1 red bell pepper diced
- 1 tbsp minced garlic
- 1 cup frozen corn
- 3 cups cooked shredded chicken I used part of a rotisserie chicken
- 1/2 cup sour cream
- 3 oz cream cheese softened
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 1/2 cups cheddar or colby jack cheese, shredded
Preheat oven to 350 °F.
To a large bowl add in all of the ingredients except for 1 cup of the cheese. Stir well.
Spray a large casserole dish with non stick spray.
Add the casserole into the baking dish and spread out.
Sprinkle the remaining cheese over the top.
Bake for 45 minutes.
