How to Make White Bean and Spinach Soup

Making this soup is very simple and quick. We love to see it!

Heat a Dutch oven over medium heat and add the oil. Add the onion and cook for a few minutes or until it starts to soften. Stir in the minced garlic and let that cook for a few seconds, then stir in the remaining ingredients. Cover with the lid and let the soup simmer for 15 minutes, stirring occasionally. Serve topped with a little Parmesan cheese and enjoy!

Ingredients

  • 1 tbsp olive oil

  • 1/2 white onion, diced

  • 1 tbsp minced garlic

  • 1 tsp salt

  • 1 tsp oregano

  • 1 tsp paprika

  • 1/2 tsp pepper

  • 28 oz can diced tomatoes

  • 15.5 oz can cannellini beans

  • 12 oz bag frozen spinach

  • 6 cups water

  • 1 vegetable (or chicken) bouillon cube

Directions

  • To a large pot or Dutch oven over medium heat, add the oil. Once hot, add the onion and cook for 4-5 minutes, until softened. Stir in the minced garlic, then stir in the remaining ingredients. Cover and let simmer for 15 minutes, stirring occasionally. Serve and enjoy!
