Vegetable Pot Pie

Ingredients
2 tbs olive oil
8 oz white mushrooms, sliced
1/2 yellow onion, diced
12 oz frozen mixed vegetables
10 oz can cream of mushroom soup
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1/2 tsp pepper
1 – 9″ ready to bake pie crust
Directions
- Preheat oven to 375 degrees
- To a saute pan over medium heat add the oil once hot add in the sliced mushrooms saute for 2-3 minutes now add in the diced onion continue to saute fo r5-7 minutes or until the onion is soft. Add in the bag of frozen vegetables and saute for 3 more minutes. Now stir in the cream of soup and seasonings.
- Grease a pie dish with non-stick spray place the pot pie filling into the pie pan spread it out. Place the pie crust over the top slice 3 1″ slits onto the top of the center of the pot pie. Bake for 30-35 minutes or until the crust is golden brown. Enjoy!
