This is a pantry-staple only recipe, meaning every ingredient comes straight from the pantry and doesn’t have to be rrefrigerated. I love stocking up on ingredients for pantry-staple recipes so I can make meals without going to the store. So when five o’clock comes around and you have absolutely nothing in your fridge, this is a go-to meal!

How to Make Vegetable Noodle Soup

I always say that whatever recipe I’m posting is the easiest recipe I’ve ever come up with, but THIS is the actual easiest recipe I’ve ever come up with. It’s a dump and go kind of soup, but it only takes 12 minutes to cook! So that means literally no planning is involved. You only need 1 pot and 20 minutes tops and you’ll have dinner on the table. I guess the hardest part might be opening the cans!

Step 1: Dump

I told you this was easy. Dump all your ingredients into your pot.

Step 2 : Simmer

Simmer until everything is heated through, and the pasta is tender. This should take about 12 minutes, depending on your range and type of pot etc.

Step 3: Serve

Ladel into bowls and serve with shaved parmesan cheese and fresh parsley. Enjoy!

Ingredients

  • 2 cups dry pasta (I used ziti)

  • 14 oz can petite diced tomatoes with garlic and olive oil

  • 2 tsp Italian seasoning

  • 1 tsp dried Rosemary

  • 2 tsp salt

  • 1 tsp pepper

  • 5 cups chicken OR vegetable broth

  • 15.5 oz can cannellini beans

  • 14.5 oz can green beans, drained

Directions

  • To a large pot over medium heat, add all of the ingredients and simmer until the pasta is tender, about 10-12 minutes, stirring often so the pasta doesn’t stick to the bottom of the pot. Serve and enjoy!
