Slow Cooker Sausage Tortellini Lasagna

Layers of tortellini, Italian sausage, and lots of cheese make this unique and delicious Slow Cooker Tortellini Lasagna. Your family will love this fun take on the classic Italian layered pasta dish.

Ingredients for Sausage Tortellini Lasagna

You don’t need a lot of ingredients to make this delicious slow cooker meal!

  • Italian sausage (you could also use any kind of ground meat like turkey, beef, chicken, or pork)
  • yellow onion
  • jarred marinara sauce
  • bag cheese tortellini (make sure you use fresh tortellini and not the dried kind)
  • cottage cheese
  • mozzarella cheese
  • Parmesan cheese
  • minced garlic

How to Make Slow Cooker Tortellini Lasagna

Cook the sausage and onion over medium heat, breaking the sausage up with a spatula or meat chopper. Cook until the sausage is fully cooked and the onions have softened a bit. Remove any excess grease from the pan by blotting it with a paper towel. It will soak up the grease and then you can just throw away the paper towel. My mom taught me that trick!

Add the two jars of marinara sauce.


Next, make the cheese mixture by combining the cottage cheese, 1 cup of mozzarella, Parmesan cheese, and garlic in a bowl.


Spray the inside of a large slow cooker with non-stick spray or use a slow cooker liner.


You’ll create three layers, so start layering the ingredients 1/3 at a time. Pour 1/3 of the sauce into the bottom of the slow cooker, then add 1/3 of the tortellini, then 1/3 of the cheese mixture, and repeat.

After you’ve used all of the ingredients, top with the remaining mozzarella cheese.

Cover with a lid and cook on LOW for 6-7 hours or HIGH for 5 hours. Ladle into bowls or plates and serve with a side salad, steamed vegetables, or homemade dinner rolls.

  • 1 lb Italian sausage

  • 1 yellow onion, diced

  • 2 – 24 oz jars marinara sauce

  • 36 oz bag cheese tortellini

  • 24 oz cottage cheese

  • 1 1/2 cup mozzarella cheese

  • 1/2 cup Parmesan cheese

  • 1 tbsp minced garlic

Directions

  • To a large deep skillet over medium heat, add the sausage and onion. Break the sausage up and cook it through. Once cooked, remove any excess grease from the pan. Stir in the two jars of marinara sauce.
  • Make the cheese mixture by combining the cottage cheese, 1 cup of mozzarella, Parmesan cheese, and garlic in a medium bowl. Stir well.
  • Spray the inside of a large slow cooker with non-stick spray.
  • Start layering the ingredients 1/3 at a time, for a total of three layers. Pour 1/3 of the sauce into the bottom of the slow cooker, then add 1/3 of the tortellini, then 1/3 of the cheese mixture, and repeat. Top with the remaining mozzarella cheese.
  • Cover with a lid and cook on LOW for 6-7 hours or HIGH for 5 hours. Enjoy!

    I put frozen tortellini in mine and let it cook for 6 hours on low! Came out perfect! Thanks so much, Julia!

  2. The flavors are really good. The tortellini was a bit too soft for me. I prefer my pasta al dente, but I knew it would be really soft going into making this. It works well for my toddler though, so that’s mainly why I made it. He liked it a lot.

  3. Looks good I am going to make this on Saturday. Can I freeze any leftovers please?
