Teriyaki Chicken Veggies and Rice

Ingredients
4 cups COOKED white OR brown rice
1 red bell pepper, diced
1 medium zucchini, diced
1 medium head of broccoli, chopped
2 large carrots, sliced
2 tbs olive oil
1 tbs minced ginger
1 tbs minced garlic
1/2 cup chicken broth
1 cup Teriyaki sauce
3 cups cooked rotisserie chicken, shredded
Directions
- To a large pot or dutch oven add the oil over medium heat add the vegetables and let cook stirring frequently for 6-8 minutes or until tender. Stir in the cooked rice, ginger, and garlic. Stir in the broth, and teriyaki sauce let simmer for for 5 minutes stirring frequently. Enjoy!
