Ingredients
4 cups cooked shredded chicken
1/4 cup sour cream
1/4 cup salsa
1 cup shredded sharp cheddar cheese
14 corn tortillas (about 14 you might need to use more or less)
6 tbs olive oil
Directions
- In a large bowl add the cooked shredded chicken, sour cream, salsa, and cheese. Stir to combine
- With a wet (not dripping wet) wrap the tortillas in in microwave for 1 minutes or until they are all hot. This will help them not crack when rolling them up.
- Scoop a small amount of the chicken mixture in each corn tortilla then roll up, do this until the chicken mixture is gone
- To a pan on the stove add 3 tbs of the olive oil, once its hot add a single layer of the taquitos down do not overlap the taquitos. Cook for 1-2 minutes on each side or until golden. Remove to a separate plate and set aside. Repeat until all the taquitos are cooked
- Top with your favorite toppings enjoy
