Sweet Potato Cheese Tortellini

Ingredients

  • 1 large sweet potato, peeled and diced

  • 1 tbs olive oil

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tsp dried oregano

  • 1 cup chicken broth

  • 4 cups fresh spinach

  • 1/2 cup half and half

  • 14 oz cheese tortellini

  • parmesan cheese for topping

Directions

  • To a large saute pan or pot, add in the and oil once its hot add in the diced sweet potato and seasonings. Stir well and cover with a lid and let cook for 5-7 minutes or until the sweet potato is tender. Stir occasionally.
  • Add in the chicken broth and spinach stir well.
  • Add in the half & half and cheese tortellini stir well and let simmer uncovered for 8-11 minutes stirring occasionally until the liquid thickens and the tortellini is tender. Top with fresh parmesan cheese and enjoy!

  1. I’ve never left a review on a recipe before, but this was so delicious and so easy, I just had to give it 5 stars. My adult daughter thought she didn’t like sweet potatoes, but after this dinner, she loves them. We can’t wait to make it again!

    This recipe would not be suitable for a vegetarian due to the chicken broth. Sub veggie broth for vegetarians ๐Ÿ™‚

  3. I’m going to try this with frozen kale. I think it might be a little easier, and then it won’t go bad if I don’t get to it until later in the week!
