Sweet Potatoes vs Yams
Let’s settle the debate right now. Yams and sweet potatoes are not the same thing! Yams have dark skin that has more of a rough bark-like texture, and inside has the texture of a normal potato. They also aren’t as sweet as a sweet potato.
Most confusingly of all, in most of the US, the words yams and sweet potatoes are used interchangeably, especially during Thanksgiving. If you’re looking to make candied yams for the holidays, you’re actually making sweet potatoes!
If you accidentally buy fresh yams, you’re going to be disappointed. Your casserole won’t turn out as sweet or creamy as it usually does.
Look for long, pointed potatoes with orange-colored, smooth skin. As long as your sweet potatoes look like sweet potatoes, you’ll be good!
Ingredients for Sweet Potato Casserole
- sweet potatoes: some people like to used canned sweet potatoes, but I prefer fresh!
- butter or margarine
- orange juice
- brown sugar
- pumpkin pie spice: you can also make your own pumpkin pie spice
- cinnamon
- mini marshmallows
How to Make Sweet Potato Casserole with Marshmallows
Making sweet potato casserole from scratch is not hard! It just requires a few steps.
Step 1: Boil your potatoes
Boil your potatoes until they are fork-tender. This should take about 15 minutes or so. Drain the potatoes and add them to a large bowl.
Step 2: Season and mash
Add your butter, orange juice, brown sugar, pumpkin pie spice, and cinnamon to the bowl with the potatoes. Mash with a potato masher or hand mixer. I like to use a hand mixer because it goes so quick.
Step 3: Assemble
Add your sweet potatoes to a baking dish and top with marshmallows.
Step 4: Bake
Bake your casserole for about 23 minutes, or until everything is warmed through and the marshmallows are browned. If the marshmallows get too brown, you can cover the casserole with foil.
Can I Make Sweet Potato Casserole with Marshmallows Ahead?
Yes, you can make this ahead of time and cook it later! Make this through step 3, but don’t add the marshmallows on top. Refrigerate the sweet potato mixture for up to 3 days. When you want to make it, just take it out of the fridge, add your marshmallows on top, and bake. You might need to add a couple of extra minutes to your baking time, and if the marshmallows get too brown, you can cover the casserole with foil.
