Ingredients

  • 1 yellow onion, diced

  • 1 Red bell pepper, diced

  • 1 Green bell pepper, diced

  • 1 lb Ground beef

  • 1 cup Uncooked white rice

  • 1 tbsp Worcestershire sauce

  • 14 oz Petite or normal diced tomatoes

  • 1 1/2 cup Beef broth

  • 3/4 cup Water

  • 1 tsp Salt

  • 1 tsp Pepper

  • 1 tsp Paprika

  • 1 tsp Italian seasoning

  • 1 1/2 cup Shredded Colby jack cheese

Directions

  • Preheat oven to 350 degrees
  • To a large pan on the stove over medium heat add the ground beef, onion, and bell peppers. Break the ground beef up and cook it through.
  • Spray a 9×13 baking dish with non-stick spray add the ground beef mixture in, Worcestershire sauce, diced tomatoes, broth, water, seasonings, and 1/2 cup of the cheese stir well. Cover tightly with foil. Bake for 40 minutes.
  • Remove the foil and stir well. Sprinkle the remaining cheese on top.
  • Bake for an additional 15 minutes or until the rice is tender. If the rice isn’t tender add in 1 more cup of water stir well and continue to bake until cooked.
