Stuffed Pepper Casserole

Ingredients
1 yellow onion, diced
1 Red bell pepper, diced
1 Green bell pepper, diced
1 lb Ground beef
1 cup Uncooked white rice
1 tbsp Worcestershire sauce
14 oz Petite or normal diced tomatoes
1 1/2 cup Beef broth
3/4 cup Water
1 tsp Salt
1 tsp Pepper
1 tsp Paprika
1 tsp Italian seasoning
1 1/2 cup Shredded Colby jack cheese
Directions
- Preheat oven to 350 degrees
- To a large pan on the stove over medium heat add the ground beef, onion, and bell peppers. Break the ground beef up and cook it through.
- Spray a 9×13 baking dish with non-stick spray add the ground beef mixture in, Worcestershire sauce, diced tomatoes, broth, water, seasonings, and 1/2 cup of the cheese stir well. Cover tightly with foil. Bake for 40 minutes.
- Remove the foil and stir well. Sprinkle the remaining cheese on top.
- Bake for an additional 15 minutes or until the rice is tender. If the rice isn’t tender add in 1 more cup of water stir well and continue to bake until cooked.
