Stovetop Smothered Pork Chops

Ingredients
1 lb boneless pork chops, medium thick
1 tsp salt
1/2 tsp pepper
2 tbs olive oil
2 tbs butter
- Gravy
1 tbs butter
1 yellow onion, sliced
2 tbs garlic
1/2 tbs thyme
1/2 cup chicken broth
1/4 cup heavy cream
fresh parsley
Directions
- Heat a saucepan over med-hi with oil and butter. Salt and pepper both sides of the pork chops.
- Add pork chops in and cook 5 minutes per side. Once completed, set aside and cover.
- Add 1 tbs butter to the pan and add onions in. Caramelize by cooking about 10 – 12 minutes with frequent stirring.
- Add garlic and thyme for 30 seconds. Add in chicken broth scraping the base of the pan. Stir in heavy cream for 1 minute. Add pork chops back in and set heat to low. Simmer for 5 minutes or until pork is finished cooking and the sauce is thick. Serve hot and enjoy!
