Steak Fajita Quesadillas – 10 Minute Dinner

If you love quesadillas, then you are going to love these easy Fajita Quesadillas that you can make on the stove top with all of the best fajita vegetables, lots of cheese, and seasoned steak you would ever want. 

This recipe has such great flavor with just a few simple ingredients. It is perfect for when you want a fun and easy dinner or lunch without doing a bunch of steps that the whole family will enjoy. 

Plus, this always satisfies my cravings for tex-mex since it has the fajita veggies all in the golden brown, crispy tortilla.

How to make Fajita Quesadillas

To a large skillet over medium-high heat add the oil, once hot add in the onion, peppers, and steak cook stirring often for 5-8 minutes or until the steak is cooked through and no longer pink in the middle.

Grease a large griddle or skillet with non-stick spray then place one tortilla to the bottom of the griddle, fill with 2 tbs of the cheese, a generous amount of the steak and pepper mixture, sprinkle a little more cheese on top then place a second tortilla over the top cook the side of each tortilla for 1-2 minutes or until the tortilla is crispy and the cheese is melty. Repeat for all of your quesadillas. 

Top with your favorite taco toppings and enjoy.

How to store leftover these steak quesadillas:

Fridge: After cooking and enjoying your fajitas, place any of the remaining steak mixture into an airtight container and store it for up to 5 days. Just pull it out and heat it for 30-60 seconds before using it next time for another round of quesadillas.

Do I need fajita seasoning mix?

When you make the recipe as written you don’t need to use fajita seasonings, however, if you have some on hand, you can omit the steak seasoning and the taco seasoning and use the fajita seasoning it its place.

Type of cheese to use for quesadillas: 

​I enjoy using the Mexican-style shredded cheese, but you could also use pepper jack cheese as well since it also has a delicious bit of spice to the cheese.

Chicken fajita quesadillas: 

You can easily turn these into a chicken fajita quesadilla recipe by swapping out the steak for chicken and making the rest of the recipes as is!

  • 1 tbs olive oil

  • 1 red onion, sliced

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 14 oz package beef shaved steak

  • 1 tbs steak seasoning (any brand will work)

  • 1 tbs taco seasoning

  • 10-15 flour tortillas

  • 1 cup Mexican style cheese, shredded

Directions
