Southwestern Black Bean Skillet

Ingredients
2 tbs olive oil
1 red bell pepper, diced
1 yellow onion, diced
1 tbs minced garlic
2 tbs taco seasoning
1 cup uncooked orzo
15oz can black beans, drained and rinsed
15oz can corn, drained
2 cups chicken broth
10 oz can Rotel
1/2 cup Mexican style cheese
Directions
- To a large skillet or dutch oven over medium heat add the oil once hot add the pepper and onion in cook the vegetables for about 7 minutes or until they get soft.
- Stir in the minced garlic for 20 seconds so it becomes fragrant. Add in the seasoning, and orzo stir well. Add in the black beans, corn, broth, and Rotel stir well cover with lid and let simmer on low for 15-20 minutes stirring frequently until the orzo is tender.
- Stir in the cheese once it melts down enjoy this dish with your favorite taco toppings.
