Slow Cooker Coconut Curry

Ingredients
1 lb chicken, cubed
1 white onion, diced
1 tbs minced ginger
1 tbs minced garlic
1/4 cup tomato paste
1.5 tbs garam masala
1 tbs curry powder
1/2 tsp salt
1/4 tsp pepper
14oz coconut milk
8oz tomato sauce
Directions
- In a slow cooker add the ginger, garlic, tomato paste, gram masala, curry powder, salt, pepper, coconut milk, and tomato sauce whisk to combine the ingredients. Now add the cubed chicken and onion, stir well.
- Cook on LOW for 6 hours or HIGH for 4 hours (or until chicken is cooked)
- Once cooked stir well and serve. I like to serve mine over a bed of white rice and naan bread on the side.
