- Protein: you will need to cut the boneless skinless chicken breasts into small bite-sized cubed pieces
- Rice: use uncooked brown rice when wanting to add whole grain
- Seasoning: use dried thyme, kosher salt, black pepper, and garlic minced for the best flavor
- Liquid: you will need to use chicken broth (or chicken stock) to cook the rice in this crock pot chicken recipe
- Veggies: grab a bag of your favorite frozen mixed vegetables and thaw them ahead of time
- Cheese: top this rice casserole with shredded cheddar cheese

Spray slow cooker with nonstick spray, add all ingredients except for the frozen veggies, and cheese.
Stir well, cook on high for 3 hours or on low for 6 hours.
