- Onion: I like to use a diced yellow onion for this but you can use what you have on hand
- Protein: you will need to cut the boneless skinless chicken breasts into small bite-sized cubed pieces
- Rice: use uncooked brown rice when wanting to add whole grain
- Seasoning: use dried thyme, kosher salt, black pepper, and garlic minced for the best flavor
- Liquid: you will need to use chicken broth (or chicken stock) to cook the rice in this crock pot chicken recipe
- Veggies: grab a bag of your favorite frozen mixed vegetables and thaw them ahead of time

Slow Cooker Chicken and Vegetables with Rice
Equipment
Ingredients
- 1 yellow onion diced
- 1 lb chicken breasts cubed into smaller pieces
- 1 cup uncooked brown rice
- 1 tsp dried thyme
- 1 tsp salt
- 1/4 tsp pepper
- 4 cloves garlic minced
- 2 cups chicken broth
- 3 cups frozen mixed vegetables THAWED (make sure the veggies have thawed either in the fridge or microwave)
- 1/2 cup cheddar cheese shredded

- Spray slow cooker with non stick spray, add all ingredients except for frozen veggies, and cheese.
