Ingredients for Broccoli Cheese Soup
Slow Cooker Broccoli Cheese Soup of course is full of broccoli and cheese, but also fragrant garlic and heavy cream for a flavorful and yummy soup.
- fresh broccoli florets (you could use frozen, but the texture turns out better if they are fresh– the frozen ones get really mushy in the slow cooker)
- butter
- carrots
- yellow onion
- minced garlic
- salt and pepper
- cornstarch (for thickening!)
- vegetable broth
- sharp cheddar cheese (use your favorite brand)
- heavy cream (the recipe says 1-2 cups so if you like things really creamy add 2!)
How to Make Cheesy Broccoli Soup
Making this Slow Cooker Broccoli Cheese Soup really couldn’t be any easier. All you have to do is chop your first few ingredients, measure it all out, and throw them in your slow cooker. You’ll want to reserve the cheese and heavy cream to add in at the end.
Make a corstarch slurry with the broth and the cornstarch (this will help thicken your soup and give you that nice and hearty texture that you’re craving!).
Once everything is all cooked, add in your cheese and cream and let that cook until everything is heated up and the cheese is melted.
Ladel into bowls, top with more cheese if you want, and enjoy! This soup would go great with some dinner rolls or some homemade sourdough!
