You will only need a few ingredients to make a delicious sauce to make flavorful beef that tastes amazing served over a bed of white rice, cauliflower rice or jasmine rice, topped with sesame seeds or green onions.
Ingredients for Slow Cooker Beef and Broccoli:
- Meat: I like to use a chuck roast, cut it into pieces and remove the large fatty pieces
- Liquid: to enhance the flavor I use beef broth but you could use chicken broth or water if you need., then you will also need low sodium soy sauce and rice vinegar
- Seasonings: have minced garlic, minced ginger
- Sugar: use brown sugar to add to the savory crock pot beef flavor profile
- Thickener: you will need to have cornstarch on hand to thicken the sauce of this slow cooker beef recipe
- Veggies: use a frozen bag broccoli to keep things simple
How to make Slow Cooker Beef and Broccoli:
Add the meat into the slow cooker.
Make the sauce. To a small mixing bowl add in the beef broth, minced garlic, minced ginger, soy sauce, brown sugar, and rice vinegar, whisk well. Pour the sauce over the meat in the slow cooker and stir. Cook on LOW for 5-6 hours.
30 minutes before it’s cooked carefully remove 1/2 cup of the sauce in the slow cooker and add it into a small bowl. Add the cornstarch into the bowl and stir until smooth. Pour this mixture into the slow cooker. Add the broccoli to the slow cooker and stir. Cook for an additional 20 minutes or until the meat is tender and the sauce has thicken.
How to store this beef and broccoli dish:
Fridge: Place the leftovers of this delicious meal in an airtight container once it has cooled to room temperature in the crock pot. Then store it in the first for up to 5 days for the best results.

I like to use a boneless beef chuck roast with this recipe, but you could also use a sirloin tip or sirloin roast in its place.
