Sheet Pan Loaded Quesadillas

I love a quesadilla. I used to eat them all the time as a kid, and now I make them for my kids! What’s not to love about cheesy, warm tortillas?

The *only* beef I have with quesadillas is they’re kind of inconvenient to make a lot of at the same time. I don’t want to pull out 4 skillets so I can have all of them ready at the same time, you know what I mean? And then I discovered the sheet pan quesadilla.

And not just any sheet pan quesadilla. This is a GIANT LOADED SHEET PAN QUESADILLA! I’m talking a sheet pan-sized quesadilla to cut into pieces and share with your fam. You’re going to love it!

Loaded Quesadillas really can be super customizable, so if there is something missing on this list that you think would be amazing, feel free to add it in!

How to Make Sheet Pan Quesadillas

People, we’re about to make a giant quesadilla. Get excited.

First, cook your ground beef and onion until the beef is done and the onions are soft. Pour out any excess grease.

Add your taco seasoning and water, and simmer for a couple of minutes. Add in your beans, corn, and salsa. You should have a delightful little taco mixture going on!

On a sheet pan, place 6 tortillas with about 1/3 of the tortilla hanging off the pan. Now place a tortilla in the center. There shouldn’t be any gaps in the bottom, so adjust your tortillas so there’s no sheet pan peaking through. Pour the cooked meat mixture to the center of the tortillas and spread. Top with cheese and green onion.

Once that’s all loaded to your liking, place a tortilla in the center of the quesadilla, and begin folding the first layer of tortillas up to meet the tortilla in the center. This should form a nice giant pocket.

Top the quesadilla with another sheet pan (make sure it is greased) to create a sort of giant quesadilla press!

Bake for about 20 minutes, then remove the top sheet pan and broil for a couple minutes until it’s nice and crispy! To serve, cut into squares and serve as you would a casserole. Top with your favorite toppings and revel in your giant quesadilla awesomeness.

I love Mexican food because it has so many fun and delicious toppings. I mean, who doesn’t just want to add extra cheese and guac to everything? You can add any of these toppings to your quesadillas and it will just send them to the next level of deliciousness.

Ingredients

  • 1 lb ground beef

  • 1 diced white onion

  • 2 tbsp taco seasoning

  • 1/2 cup water

  • 1 can black beans, drained and rinsed

  • 1 can of corn, drained and rinsed

  • 1/4 cup salsa

  • 8 large burrito-sized tortillas

  • 1 1/2 cups colby jack and cheddar cheese, or any type you prefer

  • Equipment
  • 2 sheet pans

Directions

  • Preheat oven to 425℉.
  • In a skillet over medium heat, cook ground beef and onion completely through and remove any excess grease.
  • Add in taco seasoning and 1/2 cup water. Stir together and bring to a simmer for about 1-2 minutes.
  • Add in black beans, corn, and salsa. Combine and remove the pan from heat.
  • On a greased sheet pan, place 6 tortillas with about 1/3 of the tortilla hanging off the pan. Now place a tortilla in the center.
  • Pour the cooked meat into the center of the tortillas and spread evenly. Top with cheese and green onion.
  • Place a tortilla on top in the center, and fold over the first layer of tortillas to completely cover the top of the quesadilla.
  • Spray the bottom side of the second sheet pan and place on top of the giant quesadilla with light pressure applied.
  • Bake for 20 minutes, with the second pan on top. After 20 minutes, remove the top pan and broil for an additional 1 – 3 minutes until desired crispness is achieved.
