Ingredients
3 tsp olive oil
3 tsp minced garlic
1 tsp cumin
1 tsp paprika
1 tsp coriander
1 tsp onion powder
Dash of salt & pepper
3 tbs lemon juice
3 cod fillets
1 lb brussel sprouts (cut in half)
1.5 cups cherry tomatoes
1 tbs olive oil
Directions
- Preheat oven to 400 degrees
- In a bowl whisk together the first 8 ingredients to make a sauce
- Line your sheet pan with parchment paper and spray with non-stick spray place the cod on the pan and spread with the sauce
- Place the Brussel sprouts and tomatoes around the cod
- Drizzle the vegetables with 1 tbs of olive oil the sprinkle with salt and pepper
- Bake for 20 minutes or until the cod is cooked
