Sausage & Potatoes with Summer Vegetables

Ingredients
1 1/2 lbs baby red potatoes, diced small
1 Zucchini, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
2 tbs olive oil
12 oz Kielbasa sausage, cut into half moons
1/2 cup water
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
2 tsp cajun seasoning
1 tbs minced garlic
1/3 cup parmesan cheese
Directions
- To a large skillet or pot on the stove over medium heat add in the olive oil once the oil is hot, add in the diced red potatoes and the kielbasa sausage cook this together for about three minutes stirring often. Now add in the water, and seasonings, stir well cook for five more minutes. Now I add in the minced garlic, zucchini, and bell peppers. Stir well and cover with a lid. Let this cook covered for 8 to 10 minutes, stirring occasionally until your potatoes are tender and your zucchini is cooked through. Now stir in the Parmesan cheese and once it’s melted enjoy!
