Type of chicken to use for chicken orzo skillet:

When making this recipe I love to just use a premade rotisserie chicken from the deli section at my grocery store. It keeps this recipe super simple and lessens the cooking time for this dinner recipe.

If you cannot get a rotisserie chicken in advance, you can always make up some boneless chicken breasts and shred them in advance for this recipe. Just make sure you are using pre-cooked chicken as the time for this recipe will not give enough time to cook the chicken through.

  1. Made this for dinner tonight and the family gobbled it all up! In fact, hubby said he wanted more, when with me not having any. So, I’d say this makes closer to 3-4 servings, but you could easily double the orzo, broth, and add extra seasonings and get a couple more servings out if it.

It’d be totally worth it because this is delicious.

  2. Can you sub the orzo for rice?
