  • Bacon: you will need to have pre-cooked crumbled bacon
  • Vegetables: be sure to dice up some fresh red bell pepper and yellow onion, and then get a bag of frozen corn from the grocery store
  • Seasoning: use minced garlic, sea salt, black pepper, onion powder, garlic powder, and paprika
  • Protein: get a rotisserie chicken and shred the whole chicken from the bone

For this recipe, I like to buy a whole rotisserie chicken and shred it using both light and dark meat. However, you could also cook up some chicken breasts and shred them before putting this recipe together.

Just be sure to cook the chicken to the recommended temperature of 165 degrees F (check this with a meat thermometer in the thickest part of the breast).

No, the chicken must be cooked ahead of putting the chicken casserole together. This is why I like to use a rotisserie chicken for this recipe, Grab some from Sam’s Club or Costco and let it cool down for easy shredding.

Another great option instead of using sour cream is Greek yogurt. It is a bit healthier and adds a good amount of extra protein too!
