How to Make Sun-Dried Tomato Chicken Pasta

This sun-dried tomato pasta is so dreamy and flavorful and comes together in just under 30 minutes.

First, you’ll cook the chicken in a little oil and a few seasonings. Once that is done, remove it from the pot and set aside.

This is a one-pot recipe, after all, so cook the pasta using the same pot! You know the drill. Boil the water, add in the pasta, cook until al dente, yadda yadda yadda.

Drain out the water with my favorite silicone clip-on strainer (seriously it’s so handy!). In the same pot(remember, we take one-pot recipes very seriously), add in your tomatoes, pesto, and sun-dried tomatoes. Stir it all up and add the chicken back in. You can cut the chicken up in cubes or strips, whatever you prefer!

If you really want to go all out, you could add some fresh basil on top, or leave as is. Devour!

What to Serve with Sun-Dried Tomato Pasta

You could serve this as is, but if you’re serving this as a Sunday dinner or for guests, you can definitely pair it with some side dishes too. Some steamed veggies or a side salad would be delicious and add a lighter element to the meal. If you’re looking for a carb overload, serve this with my One Hour Dinner Rolls or Garlic Pull Apart Rolls. Both will complement the meal and impress your guests.

Ingredients

  • 1 Tbsp olive oil

  • 1 lb Chicken breast

  • Salt And Pepper, to taste

  • 2 tsp Dried Basil

  • 4 cups Water

  • 12 oz Short Pasta

  • 2 cups Cherry Tomatoes, Halved

  • 1 cup Basil Pesto

  • 1/2 cup Chopped Sun Dried Tomatoes

Directions

  • Add oil to a large pot. Once hot, add chicken and season with salt, pepper, and dried basil. Cook until the chicken is cooked through. Remove cooked chicken and set aside.
  • To the same pot, add the water and bring to a boil. Add in pasta and cook for about 15 minutes or until the pasta is tender. If there is excess water, drain it out.
  • Turn heat to low, add in tomatoes, pesto, and sun-dried tomatoes. Stir well, add the chicken back in, diced, if you’d like, and serve. Enjoy!
