Chicken & Zucchini Pasta

Ingredients

  • 12oz Italian chicken sausage, cut into thin circles

  • 1 tsp olive oil

  • 1 onion, diced

  • 2 tsp garlic, minced

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 4 cups chicken broth

  • 10oz uncooked small pasta

  • 1 zucchini chopped

  • 2 tbsp lemon

  • 1/4 cup grated parmesan cheese

  • 1 cup grape tomatoes, cut in half

  • 1/4 cup fresh basil, chopped

Directions

  • Heat a saucepan or skillet over medium heat then add in the olive oil. When hot, add in the sausage and onion all at once and stir occasionally until sausage is lightly browned.
  • Add in the salt, pepper and then the garlic for 1 minute. Pour the broth in and with a non-scratching spatula, scrape any bits from the pan into the broth. Let it come to a boil and toss in the uncooked pasta. Lower heat to a med-low and let it cook for 8 – 10 minutes, stirring often. Once pasta is mostly cooked stir in the zucchini and cook additional 3-4 minutes.
  • Add in the lemon juice, about 3/4 of the parmesan cheese and the tomatoes.
  • Serve with a garnish of fresh basil and a sprinkle of parmesan cheese on top!

  2. I just made this for the first time and my first time to one of your recipes. It did not disappoint!! Wow this is the most delicious pasta dish I’ve ever had. Restaurant quality is what me and my husband kept saying! Will be making this again. Love that it is in one pot which makes clean up super easy! We did only 3.5 cups of chicken broth instead of the 4 and it still came out delicious!!
