One Pot Chicken Chicken Curry with Rice

Ingredients

  • 1 tbsp olive oil

  • 2 lbs chicken breast, cubed

  • 1 small yellow onion, diced

  • 1 red bell pepper, diced

  • 3 tsp curry powder, divided

  • 1 tbsp salt, divided

  • 1 tsp pepper

  • 1 cup uncooked jasmine rice

  • 2 cups chicken broth

  • 1 cup water

  • 1/2 cup coconut milk

  • 1/4 cup fresh cilantro

Directions

  • To a large pot add in the oil once hot add in the cubed chicken, onion, bell pepper, 1 tsp curry powder, 1/2 tbsp salt, and pepper stir well and cook for 3-4 minutes (the chicken will not be completely cooked through) remove the chicken to a plate and set to the side.
  • To the same pot add in the rice, broth, water, 1/2 tbsp salt, 2 tsp curry powder and stir well. Bring this up to a simmer and let simmer uncovered for 3 minutes while stirring occasionally. Now add back in the chicken cover with a lid and let simmer covered for 15-18 minutes stirring occasionally so the rice doesn’t stick to the bottom of the pot, until the rice is tender and the chicken is cooked through.
  • Once the rice is tender add in the coconut milk and cilantro, stir well and enjoy!
