One Pot Beefy Cheesy Potatoes

Ingredients
2 tbsp olive oil
4 medium russet potatoes, peeled and diced small
1 yellow bell pepper, diced
1 yellow onion, diced
1 tbsp minced garlic
1 lb ground beef
3/4 cup chicken broth
1 tsp pepper
1 tsp salt
1 tsp Italian seasoning
2 tsp paprika
1 cup Colby jack cheese
Directions
- To a large pan on the stove over medium heat add in the oil. Once the oil is hot, add in the onion and potatoes cook for 4 minutes stirring often.
- Now add in the bell pepper, minced garlic, ground beef, and seasonings break the ground beef up and cook for 3-4 minutes (the ground beef will not be cooked through)
- Add in the broth and turn the heat to low stir well and cook covered for 5-10 minutes or until the ground beef cooked through and the potatoes are tender.
- Stir in the cheese once it’s a melty serve.
