One Pot Beefy Cheesy Potatoes

Ingredients

  • 2 tbsp olive oil

  • 4 medium russet potatoes, peeled and diced small

  • 1 yellow bell pepper, diced

  • 1 yellow onion, diced

  • 1 tbsp minced garlic

  • 1 lb ground beef

  • 3/4 cup chicken broth

  • 1 tsp pepper

  • 1 tsp salt

  • 1 tsp Italian seasoning

  • 2 tsp paprika

  • 1 cup Colby jack cheese

Directions

  • To a large pan on the stove over medium heat add in the oil. Once the oil is hot, add in the onion and potatoes cook for 4 minutes stirring often.
  • Now add in the bell pepper, minced garlic, ground beef, and seasonings break the ground beef up and cook for 3-4 minutes (the ground beef will not be cooked through)
  • Add in the broth and turn the heat to low stir well and cook covered for 5-10 minutes or until the ground beef cooked through and the potatoes are tender.
  • Stir in the cheese once it’s a melty serve.
