One-Pot Beef & Cheese Taco Pasta

Ingredients
1 lb ground beef
1 tbs olive oil
1 white onion, diced
1 tbs minced garlic
1 red bell pepper
1 tbs taco seasoning
1 cup salsa
3 1/2 cups chicken broth
8 oz farfalle, or any small pasta
1 can black beans, drained and rinsed
1 cup frozen or fresh corn
2 cups cheddar cheese
Optional toppings: cilantro, diced avacado, lime, sour cream, jalapenos
Directions
- In a large pot with a lid or dutch oven over medium heat, pour in 1 tbs olive oil and add in the onion, bell pepper, and ground beef cook the beef through then remove any access grease.
- Add the taco seasoning, and garlic stir well.
- Pour in the broth and salsa of your choice and bring to boil. Add in the pasta and give it a really good stir. Cover and cook on a low simmer until pasta is cooked and the liquid has reduced a good amount. Stir frequently so nothing sticks to the bottom of the pot!
- Add in the corn and beans and let sit a couple minutes. Stir in cheese and serve hot!

Tasty recipe. Needed more taco seasoning (or maybe a different brand) and took way longer than expected though. I’d make some tweaks next time for my stove I think.
