Ingredients

  • 2 Roma tomatoes, diced

  • 1 zucchini, diced

  • 1 yellow onion, diced

  • 2 chicken breasts, sliced in half horizontally

  • 1 1/2 tsp salt

  • 1 1/2 tsp pepper

  • 1 1/2 tsp Italian seasoning

  • 1 1/2 tsp Paprika

  • 1 1/2 tsp Onion powder

  • 1 1/2 tsp Garlic powder

  • 1 tsp dried basil

  • 1/3 cup Parmesan cheese

  • 1/2 cup mozzarella cheese

Directions

  • Preheat oven to 400 degrees
  • Season the chicken on each side with the seasonings.
  • Spray a baking dish with non stick spray
  • Place the chicken into the baking dish side by side place the vegetables over the chicken. Sprinkle the Parmesan and mozzarella over the top.
    Bake bake for 30-35 minutes or until the chicken is cooked through

    Using your cookbook, I made Skillet Lasagna one-pot and it was delicious. Thank you so much.

    I do have a question about cooking chicken breasts. I’ve made different recipes in my crockpot and the chicken never seems to be moist and juicy. I use spices and sauces, no luck for me! Any suggestions would be greatly appreciated.

  2. I’ve made this twice so far and my family is hooked! My husband said it was the best thing he’s eaten! I did add less cheese than the recipe calls for and omitted the salt due to my husband’s low-sodium diet and it was so flavorful that we didn’t miss it!

    Tried making this for dinner tonight. I made this dish with a side of white rice. The only thing I did different was add some lime after it cooked. It was really delicious and full of flavor. I was initially thinking the measurements would be too much, but it was enough to season the chicken and veggies. Yum!

    I tried this a couple of nights ago, and it was fantastic! I had cut my veggies ahead, so it was a snap to put together. Full of flavor, and a BIG winner in our home!! My boyfriend asked me to please make it again next week. 🙂 It even looks pretty. 🙂 I struggle with cooking, but I’ve learned so much from you! I always enjoy your videos, and every recipe of yours that I’ve tried has turned out great! Thank you so much! My boyfriend thanks you too! LOL.
