Ingredients

  • 1 1/2 cups uncooked dry lentils

  • 1/4 yellow onion, diced

  • 6 large carrots, diced

  • 6 cloves of garlic, minced

  • 3 bullion cubes

  • 14 oz can diced tomatoes

  • 4 1/2 cups water

Directions

  • Rinse the lentils in a mesh strainer to clean the lentils.
  • Add the lentils and remaining ingredients into the slow cooker stir well.
  • Cook on low for 6-7 hours or until the lentils are tender

  1. This is one of our favorite stews. It is cheap and delicious.

  2. I just made this for my family last night! It was so so so good. I was shocked at how delicious it was considering it was so simple to make! We enjoyed putting it on top of rice! I doubled the recipe and was able to freeze the rest in single serve portions for easy lunches. I was able to get 12 portions out of it for about $5ish bucks. Amazing!

  3. What size crockpot do I need to make recipes in your cookbook? Are all your crockpot recipes designed for that size too? Making your Slow Cooker Mexican Pasta. No room for pasta so I did 1 cup uncooked long grain rice instead. Is this ok? TY!
