Lemon Chicken Orzo

Ingredients
1 tbs butter
1 tbs olive oil
1/2 white onion, diced
1 tbs minced garlic
1 tsp Italian seasoning
1 cup uncooked orzo
2 cups chicken broth
1 cup heavy whipping cream
1 lemon juiced
2 cups cooked shredded chicken
1/2 cup shredded parmesan cheese
4 cups fresh spinach
Directions
- To a large skillet or pot over medium heat add the butter and olive oil. Once the butter is melted add in the diced onion and sauté for 3-4 minutes or until the onion is soft.
- Add in the minced garlic, Italian seasoning and orzo stir well and let cook for 1-2 minutes.
- Add in the chicken broth, heavy whipping cream and lemon juice stir well. Let simmer uncovered for 10 minutes stirring frequently so the orzo doesn’t stick.
- Once the orzo is tender add in the cooked shredded chicken, parmesan cheese, and spinach stir well and let the spinach wilt down and cheese melt. Serve and enjoy!
