This Italian Chicken and Vegetables dish is going to be on your new weekly rotation! A zesty Italian marinade, chicken breast, tomatoes, zucchini, and green beans all bake up together and are topped with parmesan cheese. Ten minutes of prep, and just half an hour in the oven, and you’ll have an amazing meal on the table with very little effort!

How to Make Italian Chicken

For this recipe, you’ll want to slice your chicken breasts in half horizontally, to make each piece thinner. This will help the chicken cook through faster so that everything is done at the same time.

You’ll make the marinade by whisking together all of the ingredients and pouring that over the chicken and veggies. Then, once that has sat for a bit, throw all of that on a sheet pan (I love to use these sheet pans for my sheet pan meals!) and bake. Once the chicken and veggies are all cooked through, sprinkle some parmesan on top and serve!

You can serve this with pasta or rolls and you’ll have an amazing meal that tastes like it took hours to make! This would also be great with a side of roasted, mashed, or baked potatoes. Really, this could go with anything, or if you want you can serve it alone for a low-carb meal.

Olive oil, balsamic vinegar, garlic powder, and Italian seasoning come together to form a tangy and flavorful marinade that perfectly complements chicken and veggies. Ingredients

  • 1 1/2 lbs chicken breast

  • salt and pepper, to taste

  • 3 tbsp olive oil

  • 1/4 cup balsamic vinegar

  • 1 tsp garlic powder

  • 2 tsp Italian seasoning

  • 1 1/2 cups cherry tomatoes

  • 2 medium zucchini, cut into half moons

  • 2 1/2 cups green beans, trimmed

  • 1/4 cup parmesan cheese, finely grated

Directions

  • Slice each chicken breast in half horizontally to make the chicken thin. This will help make your chicken extra tender and help it cook more quickly.
  • Season the chicken with salt and pepper and place it into a large gallon-size plastic bag.
  • To a small bowl add the olive oil, balsamic vinegar, garlic powder, and Italian seasoning and whisk well. Pour half of this mixture into the bag with the chicken and place in the refrigerator to marinate for at least one hour.
  • Preheat the oven to 425โ„‰.
  • Place all of the vegetables into a large bowl with the remaining marinade and stir to coat the vegetables well.
  • Spray a rimmed baking sheet with nonstick spray and arrange the marinated chicken and vegetables evenly across the sheet pan. Bake for 25 to 30 minutes or until the chicken is completely cooked through. Sprinkle the parmesan cheese over everything. Enjoy!
