How to make Healthy Chicken Casserole:
To a large pan or large skillet on the stove, over medium heat, add the oil. Once oil is hot, add the frozen spinach, onion, and mushrooms. Stir well, and let cook for 10 minutes, stirring occasionally until the veggies are tender. Stir in all the seasonings.

Add the vegetable mixture to the bottom of the baking dish.

Fridge: Store in an airtight container in the refrigerator for up to 5 days.

- 3 cups cooked shredded chicken I used part of a rotisserie chicken
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1 cup mozzarella cheese shredded
Instructions
- Preheat oven to 350 °F
- To a large pan on the stove, over medium heat, add the oil. Once hot, add the frozen spinach, onion, and mushrooms. Stir well and let cook for 10 minutes, stirring occasionally, until the veggies are tender. Stir in all seasonings.
