Ingredients
1 tbs butter
1 tbs olive oil
1 lb chicken breast, cubed
1/2 tsp salt
1/2 tsp pepper
1/2 lb smoked pre cooked ham, cubed
1 white onion, diced
1 tbs minced garlic
14 oz can petite diced tomatoes
2 cups chicken broth
1 cup uncooked rinsed jasmine rise
1 tsp paprika
1/2 tsp dried thyme
1 tsp salt
1/2 tsp pepper
1 cup frozen peas
Directions
- To a large saute pan or pot over medium high heat add in the butter and oil. When the butter is melted add in the chicken and season with 1/2 tsp salt and pepper brown the chicken on each side.
- Add the ham to the pan and brown it on each side for about 2-3 minutes.
- Add in the diced onion, minced garlic, diced tomatoes, chicken broth, rice, seasonings, and frozen peas. Stir well and bring this mixture up to a simmer then turn the heat to low let simmer covered for 18-22 minutes stirring occasionally until the rice is tender.
