This Ground Beef and Vegetable Soup is warm and cozy and is packed with lots of produce for a nutritious and healthy comfort dish.

This Ground Beef and Vegetable Soup is packed with vitamins, minerals, and lots of protein. With 6 different fruits and veggies and vegetable juice in the broth, this soup is loaded with all the things that you’re supposed to be adding more of to your diet! You’re welcome 🙂

How to Make Ground Beef and Vegetable Soup

This soup is really a modified dump-and-go kind of situation. It takes one extra step, but then all you have to do is dump in all the extra ingredients and let it simmer away.

To start, add the ground beef to a large Dutch oven or pot over medium heat and break it up using a spatula or this meat chopper. Let the ground beef cook in the pot until it’s about 50% of the way cooked through, then remove any excess grease in the pot. I like to cover a utensil with a paper towel and move that around the pan to easily sop up any unwanted grease.

Next, add in the onion and garlic and cook together for a couple on minutes, then add in the rest of the ingredients. Stir everything up and bring it to a simmer. Let the soup simmer together, covered, for 40 minutes. Ladle into bowls and serve!

Ingredients

  • 1 lb ground beef

  • 1 yellow onion, diced

  • 3 stalks celery, sliced

  • 3 large carrots, sliced

  • 1 tbsp minced garlic

  • 2 tsp salt

  • 1 tsp pepper

  • 2 medium potatoes, peeled and cubed small

  • 1 cup frozen peas

  • 1 1/2 cups frozen green beans

  • 15 oz can diced tomatoes

  • 2 cups regular v-8 juice

  • 5 cups beef broth or chicken broth

Directions

  • To a large Dutch oven or pot over medium heat, add in the ground beef and break it up. Let the ground beef cook until it’s about 50% of the way cooked through. Remove any excess grease from the pot.
  • Add in the onion and garlic and cook for 2-3 minutes to soften the onion. Add in the remaining ingredients and seasonings and stir well. Bring up to a simmer. Let simmer, covered, for 40 minutes, stirring occasionally. Serve and enjoy!
