Ingredients

  • Salad filling:
  • 16 oz rotini pasta

  • 1 english cucumber, chopped

  • 2 roma tomatoes, diced

  • 1/2 red onion, diced

  • 1/3 cup black olives, sliced

  • 6 oz feta cheese

  • Dressing:
  • 1/2 cup light olive oil

  • 1/3 cup red wine vinegar

  • 1 lemon, juiced

  • 1 tbs minced garlic

  • 2 tsp honey

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tsp oregano

Directions

  • In a large pot, boil water and salt and cook pasta according to package instructions. Drain, rinse with cold water, drain again and set aside.
  • In a bowl, mix the dressing ingredients well.
  • In a large bowl, add the salad filling ingredients in and mix in the dressing until its well combined. Chill for an hour or longer and enjoy!
