I live off easy weeknight dinners because when it becomes dinner time, often the last thing I want to make is an overly complicated dinner recipe. But, with this recipe, you can have dinner done in less than 20 minutes and perfectly seasoned crispy chicken that the entire family will love. 

You can even make this a low carb recipe by using panko bread crumbs in place of the Italian seasoning and pairing it with your favorite vegetable for a healthy chicken recipe for the summer months especially.

How to make Garlic Parmesan Chicken with Rice

Heat 2 tablespoons olive oil in a pan over medium heat. Add the chicken and season with salt, pepper, Italian seasoning, garlic powder, and onion powder to your liking. Cook until the chicken is cooked through, then remove from the pan and set aside.

To the same pan, add 1 tablespoon more olive oil and 1 tablespoon of butter. Once hot, add in the zucchini and squash, and season with salt, pepper, and Italian seasoning to your liking. Cook until tender.

Add the chicken and Parmesan cheese to the pan. Stir to melt the cheese and serve. Enjoy!

How to store leftover breaded chicken:

Fridge: It is important to keep the leftover chicken in an airtight container for up to 3-4 days otherwise you will have soggy chicken instead of crispy parmesan garlic chicken. And no one wants soggy breaded chicken.

What to Serve with Parmesan Chicken

If you want to serve something extra with this skillet dish, I would suggest adding ricse, pasta, or some other grain. You could even make my Easy One Hour Dinner Rolls, or my Garlic Pull Apart Rolls if you want to add even more garlic into your life (I’m always looking for ways to add more garlic, lol).

This is a fabulous low carb meal, so if you want to stay low carb you could serve this with another veggie or a salad. My Caprese Salad is more cheese than vegetables and is a fantastic low carb side.

Type of rice to use:

I really enjoy using white rice for this recipe, however, you can also use brown rice as well, however, that will add to the time when making this delicious recipe since brown rice can take a while to make.

Chicken to use for dinner tonight:

Raw boneless chicken breast is a great option for this chicken dinner. However, if you have a piece of chicken that is frozen, pull it out a day or two ahead of time and let it thaw in the fridge until it is no longer frozen, but do not try cooking the recipe completely frozen.

Or you can substitute the raw chicken for 2-3 cups of rotisserie chicken. Then you just sear the chicken for a couple of minutes, add in the seasonings, and then continue on with the recipe as is.

  • 1 lb chicken breasts, cubed

  • salt

  • pepper

  • Italian seasoning

  • garlic powder

  • onion powder

  • One yellow squash, diced

  • 1/3 cup grated Parmesan cheese
