You know those meals that are always a win? Like every time you make it, you think, “Why don’t I make this more often?” Fiesta Chicken Casserole is always, always, always a win for me. It’s easy as heck, I always have the ingredients, and everyone loves it. It’s a total slam dunk!

Chicken, rice, tomatoes, corn, and black beans are enveloped in a creamy and spicy sauce for a perfect blend of comfort and zing. This Fiesta Chicken Casserole is one of my most popular recipes for a reason!

This meal is one of my favorites because I almost always have all of the ingredients on hand. I like to stock up on Rotel and Taco seasoning because I use them all the time. These two ingredients are so amazing for adding flavor fast.

How to Make Fiesta Chicken Casserole

I almost feel silly writing out a description of how to make this because it is so easy. Literally all you have to do is mix all the ingredients together (except 1/2 cup of the cheese for topping) and pour it in a greased baking dish. That’s all the prep work, I swear. Then, let it bake for half an hour, covered, and then remove the foil for the last 10 minutes of baking. That’s it!

Once your casserole is baked, you can serve it up and top with shredded lettuce, sour cream, guacamole, salsa, or lime, if you’d like. This recipe is great as is, but if you have these ingredients, these toppings add a nice fresh element to the dish.

Dump Casseroles

Dump Casseroles are kind of my favorite thing ever. I love how simple they are– I hardly have to think at all. I just dump everything in a baking dish set the timer and walk away for a while. Sometimes I like to see how much I can get done in the time that it’s cooking, and sometimes I just sit on the couch scrolling the whole time. Casseroles are great if you want a little extra time to be productive and if you want a little extra time to rest. Here are a few of my favorite easy meals!

Ingredients

  • 4 cups cooked shredded chicken

  • 1 cup uncooked instant rice

  • 10 oz can Rotel Diced Tomatoes and Green Chiles

  • 2 tbsp taco seasoning

  • 3 tbsp milk

  • 15 oz can corn, drained

  • 10 oz can cream of chicken soup

  • 15 oz can black beans, drained and rinsed

  • 1 1/2 cups shredded cheddar cheese

  • toppings like shredded lettuce, diced tomatoes, and sliced avocado (optional)

Directions

  • Preheat oven to 350℉.
  • To a large bowl, add all of the ingredients except 1/2 cup of the cheese. Stir well.
  • Grease a 9×13 baking dish with non-stick spray. Pour the casserole into the baking dish. Sprinkle the remaining cheese on top and cover with aluminum foil. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
  • Top with your favorite toppings and enjoy!
