Fried rice is one of those comfort foods that I kind of forget about it, but every time I make it I ask myself why I don’t make it more! So simple to make, with minimal, pantry-staple ingredients, this Easy Chicken Fried Rice is a go-to meal when you want something delicious.
Chicken Fried Rice Ingredients
I absolutely love this recipe because I usually have all of these things in my pantry at home. I have all of the spices and soy sauce in constant supply, and usually have a bag or two of frozen veggies somewhere in my freezer.
- olive oil
- yellow onion
- minced garlic
- minced ginger
- can of chicken (or use any cooked shredded chicken) OR Ham if you would like to make ham fried rice
- jasmine rice, cooked (really you could use just regular plain ol’ rice or brown rice too)
- frozen mixed vegetables (the stir-fry veggies from Costco are a favorite)
- eggs
- low sodium soy sauce
- sesame seeds and green onions, for garnish
How to Make Chicken Fried Rice
This recipe is sooo quick and easy if you have leftover rice. So, if I’m making rice for another meal, I’ll make extra and plan on making this chicken fried rice the next night. That way, I don’t have to spend time cooking the rice and can just jump into assembling everything. Of course, if you don’t have cooked rice on hand, you can make fresh rice and make this dish with that. I’m all about working as little as possible, though! I love to make this recipe in this amazing sauté pan. It’s high-quality and so beautiful!
So, to make this chicken fried rice, first, you’ll cook the onion in a little oil, then add the garlic and ginger and cook until fragrant. Next, stir in the chicken, (you can use chicken straight from the can, rotisserie chicken, or any leftover chicken you might have on hand) rice, and frozen veggies and cook for a few more minutes.
Now here comes the fun part. Push the food in your pan all the way to one side, leaving one side of the skillet empty. This is where you’ll cook your eggs. Grease the empty side of the pan and scramble your eggs there until cooked through. Then, mix everything together and add in your soy sauce. Let everything cook together for a few minutes, then serve and top with sesame seeds and green onions.
