This Dorito Chicken Casserole might seem a little unconventional, but I promise it’s delicious. It doesn’t taste wacky or crazy; it’s just yummy! And kind of a fun way to incorporate one of my favorite snacks into dinner. My kids love it, I love it, and I know you’ll love it.

This casserole uses Cool Ranch Doritos, cheese, zesty green chiles and tomatoes, and ranch and taco seasonings for a flavorful and unique dinner.

Dorito Chicken Casserole Ingredients

This fun and unique recipe only takes a few ingredients but packs a ton of flavor, thanks to the chips and all the seasonings. Here’s what you’ll need to make Dorito Chicken Casserole.

  • bag cool ranch Doritos (you can also use nacho cheese Doritos if you like those better)
  • shredded rotisserie chicken (or any cooked, cubed chicken)
  • Mexican style cheese
  • can cream of chicken soup
  • milk
  • sour cream
  • can Rotel Tomatoes and Green Chiles (I love to have a case of these on hand because they add so much flavor to a dish)
  • ranch seasoning
  • taco seasoning

How to Make Dorito Chicken Casserole

Making this Dorito Chicken Casserole is not hard at all. First, you’ll want to prepare a casserole dish by spraying it with non-stick spray.

Next, crush the Doritos. You can use a gallon-sized bag and a rolling pin or throw them into the food processor and blitz them for a few seconds. Pour half of the Dorito crumbs into the bottom of the baking dish and spread them out. This will create a yummy crust for the casserole. Kind of like hard-shell taco lasagna, if you think about it! Sounds crazy but it works.

I like to include my kids in the Dorito crushing step so they can feel useful and they won’t mess anything up, haha!

Next stir up the chicken and cheese mixture by combining all of the ingredients except 1/2 cup of the cheese. Spread the mixture carefully over the crushed Dorito layer, and sprinkle the remaining chips and cheese on top.

Bake the casserole for about half an hour, until the cheese is melted and bubbly and everything is warmed through. Garnish with some cilantro or parsley and serve. You’re going to be surprised at how yummy this is.

Ingredients

  • 9 oz bag cool ranch Doritos (or you can use nacho cheese Doritos)

  • 3 cups shredded rotisserie chicken (or any cooked cubed chicken)

  • 1 1/2 cups Mexican style cheese

  • 10 oz can cream of chicken soup

  • 1/2 cup milk

  • 1/2 cup sour cream

  • 10 oz can Rotel Tomatoes and Green Chiles

  • 1 tbsp ranch seasoning

  • 1/2 tbsp taco seasoning

Directions

  • Preheat oven to 350 degrees F.
  • Spray a large casserole dish or 9×13 baking dish with non stick spray.
  • Place the Doritos in a large gallon sized ziplock bag or a food processor and crush the Doritos with a rolling pin. Pour half of the Doritos into the greased baking dish and set the dish to the side.
  • To a large bowl add the chicken, 1/2 cup of the cheese, cream of chicken soup, milk, sour cream, rotel tomatoes, ranch seasoning, and taco seasoning. Stir well and pour this mixture into the dish over the Doritos. Spread it carefully so you don’t move the doritos on the bottom of the dish. Sprinkle the remaining chips and cheese on top. Bake for 30 minutes and enjoy!

  1. This was such a quick, easy & fun dinner to thro together! I had petite diced tomatoes I needed to use up and they worked just fine. Only thing was there are more tomatoes in a can of that than Rotel – so it had a bit more tomatoes than I would like lol but was still yummy. Used about 5-6 oz of cool ranch Doritos. And cheddar cheese as didn’t have Mexican.

    It turned out great! My husband went back for seconds which means it was pretty good 😉.
