Creamy Tomato Pasta

Ingredients
2 tbs olive oil
1 onion diced
1 tbs minced garlic
1/4 cup sun dried tomatoes
2 tbs tomato paste
1 tsp Italian seasoning
3 cups chicken or vegetable broth
1 15oz can diced tomatoes
12oz short pasta noodles
1 tsp salt
1/4 tsp pepper
1/4 cup cream cheese cubed
1/4 cup parmesan cheese
Directions
- In a large pot add the oil once it’s hot add the onion, garlic, and sun dried tomatoes in saute for about 3 minutes on medium heat
- Now add in the tomato paste and italian seasoning stir to combine
- Add the diced tomatoes, broth, pasta, and salt and pepper in. Simmer covered for 5 minutes (stir frequently) then uncovered for 5 more minutes (stir frequently) until the noodles are cooked
- Add the cream cheese and parmesan cheese in, stir to combine. Once the cheese melts it’s ready to serve
