You cannot go wrong with a mixture of pasta cooked to al dente, a creamy tomato pasta soup, and tender pieces of chicken all in a bowl of soup made in the slow cooker.
Soup season is here, and this slow cooker chicken parmesan soup will be one you will want to make over and over on busy weeknights.
This is such a flavorful soup using only a handful of simple ingredients and it makes for a perfect weeknight dinner, especially on the chilly days ahead.
Ingredients for Chicken Parmesan Soup:
- Chicken: use boneless skinless chicken breast
- Seasoning: you will need minced garlic, salt, black pepper, and Italian seasoning
- Tomatoes: be sure to have cans of both crushed tomatoes and tomato sauce
- Broth: use either chicken broth or chicken stock to add so much flavor to this creamy soup
- Cheese: Parmesan cheese
- Cream: using heavy cream will add a balance of cream and sweetness to this parmesan soup recipe
- Pasta: I like to use elbow pasta in this dish
- Topping: for the topping you will need Italian-style breadcrumbs, unsalted butter, and shredded mozzarella cheese
How to make Chicken Parmesan Soup:
To a large slow cooker add the chicken breast, minced garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth to the slow cooker.
Cover and cook on low for 6-7 hours or high for 4-5 hours or until the chicken is cooked through.
Remove the cooked chicken to a plate and shred or chop it into smaller pieces.
Add the chicken back into the slow cooker.
Stir in the parmesan cheese, heavy cream, and elbow pasta. Cover and cook on low for 30 minutes or until the pasta is tender.
While the pasta is cooking start cooking the breadcrumb mixture.
Add the butter and breadcrumbs to a pan on the stove and cook on medium heat until a deeper golden brown color forms. Remove from the heat.
Once the pasta is tender, top each bowl with the breadcrumb mixture and mozzarella cheese.
