Chicken Enchilada Bake

Ingredients
4 cups cooked shredded chicken (boiled or rotisserie)
2 tbs taco seasoning
28 oz green chili enchilada sauce
corn tortillas
3/4 cup sour cream
2 cups monterey jack or pepper jack cheese
Directions
- Preheat oven to 375โ
- In a bowl add the shredded chicken and taco seasoning stir to combine
- In a 2 QT baking dish, add a thin layer of enchilada sauce and place a layer of about 4 corn tortillas, spread a small scoop of sour cream on each tortilla spread it out evenly, layer the shredded chicken and a light layer of cheese on top. Total of three layers.
- Bake covered with foil for 35 minutes, uncover additional 10 minutes.

I made this for dinner tonight it was terrific. I didn’t have sour cream so I used onion dip. Added a little more cheese to the top and then broiled it for a bit. It was a hit with the family. Love your recipes.
Can I use onion dip instead of sour cream? I’m going to try this recipe tomorrow.
This recipe was simple and delicious! Next time might add some crushed chips on top to give a little crunch.
Tried this today and it was fantastic! Only mistake I made was not buying enough corn tortillas so I only had two layers. I added corn and black beans as well. Next time I will make three layers and it will be even better!! Loved it, thanks for sharing.
So good! I added a little garlic powder and smoked paprika to my chicken plus a couple chopped jalapenos. So good!
Just made this it was delicious! It was so easy to do as well and saved a lot on time for me can’t wait to try yr other recipes!
