Move over, Panda Express. We’re making better-than-takeout Chicken Chow Mein at home! Okay, technically this recipe is lo mein, not chow mein. Lo mein = sauteed or stirred noodles. Chow mein = fried noodles. But for the purposes of this recipe I’m going to keep calling this chow mein. Good? Good.

Just like your favorite takeout version, but a lot healthier, a lot fresher, and a lot cheaper. If you love Chinese takeout, your family will love this dish. It’s so delicious and easy and packed with fresh vegetables, fresh spices, and amazing flavor. The sauce is so addicting and the noodles end up perfect– this might be my new favorite Friday night meal.

Ingredients for Chicken Chow Mein with Vegetables

You really don’t need any fancy ingredients for this chow mein recipe. You can find everything that you need at your local grocery store.

How to Make Chicken Chow Mein with Vegetables

To make this chicken chow mein, you don’t need any fancy equipment. All you need is your favorite skillet. I absolutely love this beautiful one from Amazon!

Add the oil to the skillet over medium heat. Once that is hot, add in the chicken and season with the pepper. Cook the chicken for about four minutes; it shouldn’t be completely cooked through at this point and that’s OK.

Add in all of your vegetables and cook for three minutes to soften. Stir in the garlic and ginger and cook until fragrant, being careful not to burn the garlic. Add in the hoisin sauce, soy sauce, and chicken broth and stir well.

Bring that all up to a boil, add in the lo mein noodles, and simmer for about 8 to 10 minutes until the noodles are cooked through. Divide into bowls and top with sesame seeds and green onions for garnish. Enjoy!

Ingredients

  • 2 large carrots, shredded

  • 1 red bell pepper, sliced

  • 2 tbsp olive oil

  • 1 lb chicken breast, cubed

  • 1/2 tsp pepper

  • 1 cup snow peas, sliced into smaller pieces

  • 3 cups cabbage, sliced (I used pre sliced try-colored coleslaw mix)

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

  • 1/4 cup hoisin sauce

  • 1/4 cups low sodium soy sauce

  • 4 cups chicken broth

  • 13 oz Chinese style Lo Mein noodles

  • Toppings
  • sesame seeds

  • green onions

Directions

  • To a large pot over medium heat, add the oil. Once oil is hot, add in the chicken and season with a dash of pepper. Cook the chicken for about 4 minutes. The chicken doesn’t need to be completely cooked through at this point.
  • Stir in the carrots, bell peppers, snow, peas, and shredded cabbage and cook for 3 minutes to soften the vegetables.
  • Stir in the garlic and ginger and cook until fragrant, about 20 seconds.
  • Add in the hoisin sauce, soy sauce, and broth, and bring to a boil. Add in the noodles and simmer for about 8-10 minutes, stirring frequently, until the noddles are tender. Top with sesame seeds and green onions and enjoy.
