Chicken Black Bean and Rice Casserole

Instructions:

  1. Preheat oven to 350°F.
  2. Spray a 9×13-inch baking dish with non-stick spray.
  3. In the baking dish, add rice, chicken broth, salsa, melted butter, black beans, chicken breasts, enchilada sauce, salt, pepper, and taco seasoning. Stir to combine the ingredients evenly.
  4. Cover tightly with foil and bake for 55 minutes.
  5. Remove the foil, sprinkle cheese over the top, and bake for an additional 15 minutes, or until the rice is tender and the chicken is fully cooked.
  6. Serve warm and enjoy!
