Chicken Avocado Ranch Burritos

Ingredients
1.5 lbs chicken breast
1.5 tbs taco seasoning
3 tbs olive oil
1 tbs lime juice
1/2 cup fresh cilantro
4 large burrito sized tortillas
1/2 cup shredded monterey jack cheese
1 large avocado, sliced
fresh cilantro for inside the burrito
Drizzle of ranch dressing for each burrito
Directions
- Slice the chicken breasts in half horizontally (this will help the chicken cook quicker) place the chicken in a large bowl or large ziplock back add in the taco seasoning, olive oil, lime juice, and 1/2 cup fresh cilantro mix all of these ingredients in with the chicken well. Place in the refrigerated for 2 hours to marinate. (if you don’t have time to let the chicken marinate you can skip that step)
- Heat a pan on the stove (I used a grill pan but any pan will work) then add the chicken and cook the chicken through. Once cooked remove the chicken to a cutting board and cut into smaller pieces.
- To assemble the burritos fill each tortilla with a little bit of the cheese, chicken, avocado, cilantro, ranch dressing, and more cheese on top! Roll into a burrito. Place on a hot oiled pan and cook until the burrito crisps up. Enjoy
