Cheesy Chicken Broccoli and Rice

Ingredients
2 tbs olive oil
1 lb chicken breast, cubed
1/4 tsp pepper
1/2 tsp salt
1 white onion, diced
1 tbs minced garlic
1 1/2 cups jasmine rice, rinsed
2 cups chicken broth
2 cups water
3 1/2 cups fresh broccoli florets
1/2 cup milk
1 1/2 cups shredded cheddar cheese
Directions
- Preheat oven to 425 degrees
- To a large dutch oven add the oil over medium heat. Once hot add the chicken, pepper, salt, diced onion, and minced garlic stir well and let the chicken cook for 5-7 minutes (It doesn’t need to be completely cooked through at this point).
- Add in the rinsed rice, broth, and water stir well and let simmer covered for 10 minutes stirring occasionally.
- Add in the broccoli cover and continue to let simmer stirring occasionally until the rice is tender.
- Stir in the milk and 1 cup of the cheese sprinkle the top with the remaining cheese. Place in the oven uncovered to bake for 15 minutes. NOTE: If your dutch oven/pot isn’t oven safe transfer to aa oven safe casserole dish and bake it in there. Enjoy!
