Butter Chicken Casserole

Ingredients
1 cup uncooked jasmine rice
3 tbsp butter, melted
1 1/2 cups chicken broth
1 tbsp minced garlic
14 oz can fire roasted diced tomatoes
1 1/2 lbs chicken thighs, cubed
1 tsp salt
1/2 tsp pepper
2 tsp graham masala seasoning
1 tsp ground ginger
Toppings: lime, cilantro, sour cream and naan bread on the side
Directions
- Preheat oven to 350 degrees F
- Spray a 9 x 13 baking dish with nonstick spray add in the rice, butter, broth, minced garlic, diced tomatoes, chicken and seasonings stir well. Cover tightly with foil and bake for 45 minutes.
- Once the rice is tender remove the foil stir and bake for an additional 15 minutes. Top with your favorite toppings.
