Buffalo Chicken Stuffed Sweet Potatoes

Ingredients
4 cups shredded chicken
1/4 cup buffalo sauce
3 tbs ranch dressing
1/2 tsp garlic powder
1/2 tsp onion powder
4 medium sweet potatoes
1/4 cup water
4 green onions
Directions
- Using a fork poke holes in the sweet potatoes then place them on a microwave safe plate, pour the water over the top and place a sheet of wax paper over everything microwave for 5 minutes at a time until the potatoes are soft.
- Add the cooked shredded chicken to a medium sized bowl with the buffalo sauce, ranch, and seasonings stir to combine.
- Cut the cooked sweet potatoes open and add the buffalo chicken in the center. Drizzle with more ranch dressing and sprinkle with green onions.
